- Heat olive oil in a Dutch oven over medium heat.
- Add chicken breasts, onion, and garlic; sauté for about 5 minutes until the chicken is browned on both sides.
- Add the chicken broth, cannellini beans, green chiles, oregano, cumin, and cayenne pepper to the pot.
- Bring the mixture to a simmer, then reduce heat to low and cook for 40 minutes.
- Remove the chicken breasts, shred them with two forks, and return the meat to the pot.
- Stir in the fresh cilantro and shredded Monterey Jack cheese.
- Season with salt to taste and serve warm.
