  • 1 tablespoon extra virgin olive oil
  • 3 halves boneless skinless chicken breasts
  • 1 large yellow or white onion, chopped
  • 2 cloves garlic, minced
  • 5.25 cups low-sodium chicken broth
  • 3 (15oz) cans cannellini beans, rinsed and drained
  • 2 (4oz) cans chopped green chiles
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 2 pinches cayenne pepper
  • 0.25 cup fresh cilantro, chopped
  • 0.5 cup shredded Monterey Jack cheese
  • Salt to taste

Method
 

  1. Heat olive oil in a Dutch oven over medium heat.
  2. Add chicken breasts, onion, and garlic; sauté for about 5 minutes until the chicken is browned on both sides.
  3. Add the chicken broth, cannellini beans, green chiles, oregano, cumin, and cayenne pepper to the pot.
  4. Bring the mixture to a simmer, then reduce heat to low and cook for 40 minutes.
  5. Remove the chicken breasts, shred them with two forks, and return the meat to the pot.
  6. Stir in the fresh cilantro and shredded Monterey Jack cheese.
  7. Season with salt to taste and serve warm.
