  • ½ pound pitted cherries (or blackberries)
  • 1 pound strawberries (quartered)
  • 5 ounces blueberries
  • 5 ounces blackberries
  • ¼ cup torn mint (or basil)
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey (or agave syrup)
  • ¼ teaspoon kosher salt

Method

  1. Cut watermelon into 1-inch cubes and transfer to a large mixing bowl
  2. Add pitted cherries and quartered strawberries to the bowl
  3. Stir in blueberries and blackberries
  4. In a small bowl, whisk lime juice, honey, and salt until combined
  5. Pour dressing over fruit; gently toss to coat
  6. Top with torn mint and refrigerate for 15-20 minutes before serving

Notes

Use fresh berries for optimal flavor; thawed frozen berries work in a pinch
Cherries can be replaced with blackberries for a tart twist
Mint can be substituted with basil
For vegan version, use agave syrup instead of honey
Store leftovers in airtight container in fridge for up to 24 hours
