Ingredients

  • 1.5 lbs Chicken breast, cut into 2-inch uniform nuggets
  • 1 cup All-purpose flour
  • 1 tbsp Paprika
  • 1.5 tsp Cayenne pepper
  • 2 tsp Garlic powder
  • 1 cup Unsalted butter
  • 0.5 cup Frank’s RedHot sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Honey
  • 1 tsp Vinegar
  • Vegetable oil for frying
  • Salt and pepper to taste

Method

  1. In a large resealable bag, combine the flour, paprika, cayenne pepper, garlic powder, salt, and pepper.
  2. Shake the bag well to mix the spices thoroughly.
  3. Add chicken pieces in small batches of ten, sealing the bag and shaking to coat each piece completely.
  4. Place the coated nuggets on a parchment-lined baking sheet and refrigerate for 20 minutes to set the breading.
  5. Heat 3 inches of vegetable oil in a large stockpot or Dutch oven to 360°F.
  6. Fry the chicken in small batches for 10 to 15 minutes until golden brown and crispy.
  7. In a saucepan over medium heat, whisk together butter, hot sauce, brown sugar, honey, and vinegar until emulsified.
  8. Toss the fried nuggets in the sauce until evenly coated and serve immediately.

Notes

Ensure oil temperature remains consistent at 360°F to prevent soggy breading. Do not overcrowd the pot while frying to maintain temperature. Serve with a side of ranch or celery sticks for a classic pub experience.
