- Season chicken thighs with salt, pepper, and Italian seasoning.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear chicken for 3-4 minutes per side until golden brown.
- Remove chicken and set aside.
- Add remaining olive oil to the skillet and sauté chopped onion until translucent.
- Stir in minced garlic and sun-dried tomatoes; cook for one minute.
- Add orzo to the skillet and stir to coat.
- Pour in chicken broth and bring to a simmer, cooking until orzo is tender.
- Return chicken to the skillet, stir in heavy cream, spinach, and parmesan cheese.
- Simmer until spinach is wilted and sauce is creamy before serving.
Notes
You can substitute chicken thighs with breasts if preferred. Ensure you use oil-packed sun-dried tomatoes for the best depth of flavor in the base.
