Ingredients
  

  • 1.5 lbs boneless skinless chicken thighs
  • 1.5 cups orzo pasta
  • 3 cups low-sodium chicken broth
  • 0.66 cup oil-packed sun-dried tomatoes, chopped
  • 3 cups fresh spinach
  • 0.5 cup heavy cream
  • 0.25 cup freshly grated parmesan cheese
  • 4 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt, pepper, and Italian seasoning to taste

Method
 

  1. Season chicken thighs with salt, pepper, and Italian seasoning.
  2. Heat 2 tablespoons of olive oil in a skillet over medium-high heat and sear chicken for 3-4 minutes per side until golden brown.
  3. Remove chicken and set aside.
  4. Add remaining olive oil to the skillet and sauté chopped onion until translucent.
  5. Stir in minced garlic and sun-dried tomatoes; cook for one minute.
  6. Add orzo to the skillet and stir to coat.
  7. Pour in chicken broth and bring to a simmer, cooking until orzo is tender.
  8. Return chicken to the skillet, stir in heavy cream, spinach, and parmesan cheese.
  9. Simmer until spinach is wilted and sauce is creamy before serving.

Notes

You can substitute chicken thighs with breasts if preferred. Ensure you use oil-packed sun-dried tomatoes for the best depth of flavor in the base.
