Ingredients
  

  • 8 Chicken Drumsticks (skin on)
  • 2 tablespoons Olive Oil
  • 1 tablespoon Fresh Ginger (finely grated)
  • 3 cloves Garlic (grated or pressed)
  • 1 Lime (zested and juiced)
  • 1/2 Thai Chili (finely minced)
  • 1 teaspoon Turmeric Powder
  • 2 tablespoons Fish Sauce
  • 1 tablespoon Tamari or Soy Sauce
  • 1 tablespoon Honey
  • 1 teaspoon Sesame Oil

Method
 

  1. In a large mixing bowl, combine olive oil, grated ginger, minced garlic, lime zest, lime juice, chili, turmeric, fish sauce, tamari, honey, and sesame oil.
  2. Add the chicken drumsticks to the bowl and massage the marinade into the meat thoroughly.
  3. Transfer the chicken and marinade into a sealed container and refrigerate overnight, turning occasionally to ensure even coating.
  4. Preheat the air fryer to 375°F (190°C).
  5. Arrange the marinated drumsticks in a single layer in the air fryer basket, ensuring they do not overlap.
  6. Cook for 25 minutes, flipping the chicken halfway through to ensure even browning and crispiness.
  7. Check for doneness by ensuring the internal temperature reaches 165°F (74°C).
  8. Serve immediately, garnished with extra lime wedges or fresh herbs if desired.

Notes

Ensure you pat the drumsticks dry if they are very wet from the marinade before placing them in the air fryer for maximum crispiness. For a gluten-free meal, ensure you use certified Tamari instead of standard Soy Sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
