  • 4 cube steaks
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 1 cup beef broth (alcohol-free)
  • 1 cup chicken broth
  • 1 large yellow onion, thinly sliced
  • 1 teaspoon brown sugar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Season the cube steaks with salt, pepper, and garlic powder, then lightly coat each side with the flour.
  2. Heat the olive oil and 1.5 tablespoons of butter in a large skillet over medium-high heat.
  3. Sear the steaks for 2-3 minutes per side until deeply browned, then remove them from the pan.
  4. Add the remaining butter to the same skillet and sauté the sliced onions until soft and golden.
  5. Whisk in any remaining flour and the brown sugar, cooking for 1 minute.
  6. Slowly pour in the beef and chicken broths while whisking to create a smooth, rich gravy.
  7. Return the steaks to the skillet and reduce heat to low.
  8. Cover and simmer for 30 minutes until the steaks are tender and the gravy has thickened.

Notes

Ensure you pound the cube steaks to an even thickness if they appear uneven before cooking. Use a heavy-bottomed skillet for the best sear. You can add sliced mushrooms for extra flavor if desired. Store leftovers in an airtight container for up to 3 days.
