- Season the chicken thighs thoroughly with garlic powder, salt, and pepper to taste.
- Heat a large non-stick skillet over medium-high heat until hot.
- Place chicken skin-side down in the skillet and sear for 3-4 minutes per side until golden brown.
- Whisk together honey, soy sauce, minced garlic, ketchup, remaining garlic powder, and ginger in a small bowl.
- Remove the chicken from the skillet and set aside.
- Add the butter to the same skillet and sauté the sliced squash and zucchini until lightly charred.
- Return the chicken to the skillet and pour the honey-garlic sauce over the ingredients.
- Simmer for 5-7 minutes until the sauce thickens and glazes the chicken and vegetables thoroughly.
Notes
Ensure you sear the chicken skin-side down first to render the fat for maximum flavor. You can swap butter for coconut oil or avocado oil to keep the recipe dairy-free. Store leftovers in an airtight container for up to 3 days.
