Ingredients
  

  • 4 chicken thighs (boneless or bone-in)
  • 1/4 cup honey
  • 2 tbsp low-sodium soy sauce
  • 1 tsp fresh garlic, minced
  • 2 tbsp tomato ketchup
  • 1 tsp garlic powder, divided
  • 1/4 tsp ground dried ginger
  • 2 medium yellow squash, sliced
  • 2 medium zucchini, sliced
  • 1 tbsp butter or coconut oil
  • Salt and pepper to taste

Method
 

  1. Season the chicken thighs thoroughly with garlic powder, salt, and pepper to taste.
  2. Heat a large non-stick skillet over medium-high heat until hot.
  3. Place chicken skin-side down in the skillet and sear for 3-4 minutes per side until golden brown.
  4. Whisk together honey, soy sauce, minced garlic, ketchup, remaining garlic powder, and ginger in a small bowl.
  5. Remove the chicken from the skillet and set aside.
  6. Add the butter to the same skillet and sauté the sliced squash and zucchini until lightly charred.
  7. Return the chicken to the skillet and pour the honey-garlic sauce over the ingredients.
  8. Simmer for 5-7 minutes until the sauce thickens and glazes the chicken and vegetables thoroughly.

Notes

Ensure you sear the chicken skin-side down first to render the fat for maximum flavor. You can swap butter for coconut oil or avocado oil to keep the recipe dairy-free. Store leftovers in an airtight container for up to 3 days.
