Tender Chicken with Maple Dijon Glaze

Ingredients
  

  • 1.5 lbs boneless chicken thighs
  • 1 lb Brussels sprouts, trimmed and halved
  • 4 large rainbow carrots, sliced into 2-inch rounds
  • 2 large sweet potatoes, cut into small rounds
  • 2 tbsp pure maple syrup
  • 2 tbsp Dijon mustard
  • 3 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a large sheet pan with parchment paper.
  3. Toss the prepared Brussels sprouts, carrots, and sweet potatoes with olive oil, salt, and pepper on the prepared pan.
  4. Bake the vegetables for 20 minutes until they begin to soften.
  5. In a small bowl, whisk together the maple syrup, Dijon mustard, and a pinch of salt and pepper.
  6. In a separate bowl, toss the chicken thighs with olive oil, paprika, garlic powder, salt, and pepper.
  7. Remove the sheet pan from the oven and carefully arrange the seasoned chicken thighs among the partially cooked vegetables.
  8. Return the pan to the oven and roast for an additional 20-25 minutes until the chicken is cooked through.
  9. Brush the maple-Dijon glaze generously over the chicken and vegetables in the final 5 minutes of roasting for maximum caramelization.
  10. Serve immediately while warm.

Notes

Ensure vegetables are cut into uniform sizes to guarantee even cooking. Bone-in skin-on chicken thighs may be used for extra crispiness but will require an additional 10-15 minutes of roasting time. Store leftovers in an airtight container for up to 3 days.
