- Place chicken thighs in a bowl and sprinkle with sea salt at least one hour before cooking; keep refrigerated.
- Preheat a large skillet over medium-high heat.
- Place chicken thighs skin-side down in the skillet and sear until the skin is golden brown and crispy, then remove thighs and set aside.
- Add butter to the same skillet and sauté the onions until they are deeply caramelized and fragrant.
- Stir in the Dijon mustard, apple cider, and chicken broth, scraping the bottom of the pan to release any browned bits.
- Return the chicken thighs to the skillet, skin-side up, and add the apple wedges, bay leaf, and fresh thyme.
- Cover the skillet and simmer on low heat for approximately 45-50 minutes, or until the chicken is tender and cooked through.
- Remove the lid for the final 10 minutes if you prefer a thicker sauce.
- Serve warm, spooning the pan sauces and caramelized onions over the top.
Notes
Ensure the chicken is patted very dry before searing to achieve the crispiest skin. If the sauce is too thin, transfer the chicken to a platter and reduce the liquid over high heat for a few minutes before serving. This dish pairs perfectly with roasted potatoes or wild rice to soak up the flavorful braising liquid.
