Method
- Place chicken breasts into a large resealable bag or mixing bowl.
- Whisk the balsamic vinegar, olive oil, garlic, rosemary, thyme, mustard, salt, and pepper in a small bowl until well combined.
- Pour the marinade over the chicken and seal the bag, removing excess air to ensure the meat is fully coated.
- Refrigerate the chicken for at least 2 hours, or up to 8 hours for deeper flavor penetration.
- Preheat your grill to 400°F (200°C).
- Grill the chicken for approximately 6 to 8 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving.
Notes
You can substitute chicken breasts with chicken thighs if preferred. Ensure you do not marinate for longer than 8 hours as the acidity may change the texture too much. For best results, use aged balsamic vinegar.
