Ingredients
  

  • 2 lbs boneless skinless chicken breast
  • 1/3 cup high-quality balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1 Tbsp fresh minced garlic
  • 3/4 tsp dried rosemary
  • 3/4 tsp dried thyme
  • 2 tsp Dijon mustard
  • 1 tsp salt
  • 1 tsp black pepper

Method
 

  1. Place chicken breasts into a large resealable bag or mixing bowl.
  2. Whisk the balsamic vinegar, olive oil, garlic, rosemary, thyme, mustard, salt, and pepper in a small bowl until well combined.
  3. Pour the marinade over the chicken and seal the bag, removing excess air to ensure the meat is fully coated.
  4. Refrigerate the chicken for at least 2 hours, or up to 8 hours for deeper flavor penetration.
  5. Preheat your grill to 400°F (200°C).
  6. Grill the chicken for approximately 6 to 8 minutes per side, or until the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the grill and let it rest for 5 minutes before slicing and serving.

Notes

You can substitute chicken breasts with chicken thighs if preferred. Ensure you do not marinate for longer than 8 hours as the acidity may change the texture too much. For best results, use aged balsamic vinegar.
