Ingredients

  • 3 1/4 cups all-purpose flour
  • 1 packet instant yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup warm milk
  • 1/3 cup olive oil (or avocado oil)
  • 1 large egg
  • 4 tbsp softened butter
  • 2 cloves minced garlic
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp fresh basil, chopped
  • 1 1/2 cups shredded mozzarella cheese
  • Optional substitution: 1 1/2 cups Gouda cheese instead of mozzarella

Method

  1. Combine all-purpose flour, instant yeast, salt, and sugar in a bowl. Add warm milk, olive oil, and egg. Mix until a soft dough forms.
  2. Knead the dough for 8–10 minutes until smooth and passes the windowpane test. Place in a greased bowl and let rise for 1 hour, or until doubled in size.
  3. In a separate bowl, mix softened butter, minced garlic, chopped parsley, dried oregano, and fresh basil until well combined.
  4. Roll the risen dough into a large rectangle. Spread the garlic herb butter mixture evenly over the dough. Sprinkle the shredded mozzarella (or Gouda) cheese evenly, then tightly roll the dough into a log. Slice into 8 equal pieces and twist each piece slightly for a swirled effect.
  5. Place the twisted pieces side by side on a baking sheet. Cover and let rest for 20–30 minutes. Bake at 350°F (175°C) for 30–35 minutes until golden and crusty. Let rest for 10 minutes before slicing to serve.

Notes

Ensure milk is 110°F (43°C) to properly activate yeast. Adjust cheese types (e.g., cheddar) for desired flavor profiles. Use avocado oil instead of olive oil for a lighter option. Let the bread rest before slicing to maintain its structure. Optional: sprinkle melted butter and grated Parmesan over the bread while still warm for extra flavor.
