Ingredients
  

  • Sweet potatoes (1½ lbs, peeled and cubed)
  • Avocado oil (1 tbsp) or olive oil
  • Ground beef (1 lb) or ground turkey
  • Black beans (6 oz, canned or frozen, drained/rinsed)
  • Cottage cheese (16 oz, curds and whey drain or stir)
  • Shredded cheese (2 oz, Cheddar or mozzarella)
  • Avocado (1, sliced)
  • Everything spice blend (salt, parsley, herbs)
  • Hot honey glaze (optional, for drizzling)
  • Black pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Toss sweet potatoes with oil and everything spice blend in a bowl. Spread in a single layer on the sheet (space about 1" apart). Roast 25-30 minutes, flipping halfway, until golden and crisp.
  3. In a skillet, brown beef (or turkey), crumble into small bits, and drain excess fat using a paper towel or colander.
  4. Season beef mixture with everything spice blend while slightly simmering (optional). Reserve.
  5. Assemble bowls by layering sweet potatoes first, topped with roughly ½ cup of cottage cheese.
  6. Sprinkle shredded cheese over the bowl, add avocado slices, and drizzle with hot honey (if using). Finish with freshly cracked pepper.

Notes

For even roasting sweet potatoes, avoid overcrowding the baking sheet.
Break cooked beef with a spoon to prevent clumping for a tender texture.
Pre-shredded cheese melts faster for easier topping.
Canned black beans work well—just drain thoroughly.
