- Fold the cooled spinach and chopped sun-dried tomatoes into the cheese mixture.
- Pat each chicken breast dry and slice a deep pocket into the thickest part of each piece.
- Stuff each breast pocket generously with the prepared cheese and vegetable mixture.
- Sear the chicken in a hot skillet until golden brown on both sides.
- Transfer the chicken to a baking dish and finish in the oven for approximately 20-25 minutes until the internal temperature reaches 165 degrees Fahrenheit.
Notes
Ensure the spinach is completely cooled before mixing with the cheese to prevent the filling from becoming too runny. You can secure the pockets with toothpicks if needed during the searing process to keep the filling intact.
