Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 3 cups fresh spinach, roughly chopped
  • 4 oz cream cheese, softened
  • 1 cup mozzarella cheese, freshly shredded
  • 1/3 cup sun-dried tomatoes, drained and chopped
  • 4 cloves garlic, minced
  • 1 tsp olive oil
  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Heat one teaspoon of oil in a skillet over medium heat and sauté the spinach and garlic until wilted, then set aside to cool.
  3. In a medium bowl, combine the cream cheese, shredded mozzarella, and spices until uniform.
  4. Fold the cooled spinach and chopped sun-dried tomatoes into the cheese mixture.
  5. Pat each chicken breast dry and slice a deep pocket into the thickest part of each piece.
  6. Stuff each breast pocket generously with the prepared cheese and vegetable mixture.
  7. Sear the chicken in a hot skillet until golden brown on both sides.
  8. Transfer the chicken to a baking dish and finish in the oven for approximately 20-25 minutes until the internal temperature reaches 165 degrees Fahrenheit.

Notes

Ensure the spinach is completely cooled before mixing with the cheese to prevent the filling from becoming too runny. You can secure the pockets with toothpicks if needed during the searing process to keep the filling intact.
