Ingredients
  

  • Boneless skinless chicken breast, 1 lb (450g)
  • Kosher salt, 1 tsp + ½ tsp
  • Black pepper, ½ tsp + ½ tsp
  • Olive oil, 2 tsp + ½ cup
  • Sliced strawberries (dressing), 1 cup
  • Balsamic vinegar, ¼ cup
  • Water, 2 tbsp
  • Minced shallot, 1 tbsp
  • Dijon mustard, 1 tsp
  • Honey, 1 tsp
  • Romaine hearts, 8 cups
  • English cucumber, 1 cup
  • Sliced strawberries (salad), 1 cup
  • Avocado, 1 medium
  • Feta cheese, ⅓ cup
  • Pecans, ⅓ cup
  • Red onion

Method
 

  1. Season chicken with 1 tsp salt and ½ tsp black pepper
  2. Heat 2 tsp olive oil in a skillet; cook chicken 5-7 minutes per side until golden
  3. Whisk dressing: ½ cup olive oil, balsamic, water, ½ tsp salt, shallot, mustard, honey
  4. Arrange romaine, cucumber, strawberries, and red onion on a platter
  5. Top with avocado, crumbled feta, toasted pecans, and cooled chicken
  6. Drizzle dressing over the salad

Notes

Use frozen strawberries if fresh are unavailable
Substitute kale for romaine
Toast pecans in a skillet for extra flavor
Dressing doubles as a marinade—marinate chicken 20-30 minutes for extra moisture
