Ingredients
  

  • 1/4 cup + 1 Tbsp olive oil
  • 1/4 cup low-sodium soy sauce
  • 1 1/2 tbsp lemon juice (or lime)
  • 1 1/2 tbsp apple cider vinegar (or red wine vinegar, alcohol-free)
  • 2 1/2 tbsp gluten-free Worcestershire sauce (non-alcoholic)
  • 1 tbsp honey (or maple syrup)
  • 1 3/4 lbs sirloin steak (1 1/4" dice)
  • 8 oz mushrooms (shiitake recommended)
  • 3 bell peppers (include 1 orange if available)
  • 1 large red onion (1 1/4" chunks)
  • 1/2 tsp garlic powder (or onion powder)

Method
 

  1. Whisk olive oil, soy sauce, lemon juice, vinegar, Worcestershire sauce, honey, garlic powder, and black pepper in a bowl.
  2. Seal sirloin cubes in a gallon-sized bag with marinade, press air out, and refrigerate for 3-6 hours.
  3. Preheat grill to 425°F, cleaning grates halfway through.
  4. Toss bell peppers with remaining 1 Tbsp olive oil.
  5. Thread marinated steak, peppers, mushrooms, and onions onto skewers.
  6. Grill for 8-9 minutes, turning occasionally, until steak is medium-rare and veggies are charred.

Notes

For alcohol-free Worcestershire, use a vegan-certified non-alcoholic version.
Substitute shiitake mushrooms for depth of flavor.
Reserve grilled skewers at room temperature for up to 30 minutes before serving.
