- Whisk olive oil, soy sauce, lemon juice, vinegar, Worcestershire sauce, honey, garlic powder, and black pepper in a bowl.
- Seal sirloin cubes in a gallon-sized bag with marinade, press air out, and refrigerate for 3-6 hours.
- Preheat grill to 425°F, cleaning grates halfway through.
- Toss bell peppers with remaining 1 Tbsp olive oil.
- Thread marinated steak, peppers, mushrooms, and onions onto skewers.
- Grill for 8-9 minutes, turning occasionally, until steak is medium-rare and veggies are charred.
