Method
- Place the whole chicken on a cutting board with the breast side facing down.
- Use poultry shears to cut along both sides of the backbone and remove it.
- Flip the chicken over, breast side up, and press down firmly on the breastbone until the bird lies flat.
- Trim any excess skin or wing tips.
- Preheat oven to 240°C.
- Arrange the flattened chicken on a roasting pan with the garlic, potatoes, and onion.
- Drizzle everything with olive oil and sprinkle with thyme, rosemary, and oregano.
- Roast for 75 minutes until the chicken is golden brown and juices run clear.
Notes
Ensure the chicken is fully thawed before beginning the spatchcock process for the best results. You can add fresh lemon slices for extra brightness.
