Ingredients
  

  • 1 lb ground beef (80/20 blend recommended)
  • 1 tsp salt
  • 4 large flour tortillas
  • 1½ cups cheddar cheese (or mozzarella/American)
  • ½ small red onion, sliced (or green onions)
  • ¼ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • ½ tsp paprika
  • ½ cup pickles, chopped

Method
 

  1. Whisk mayonnaise, ketchup, mustard, and paprika in a small bowl. Set aside.
  2. Divide ground beef into 4 equal balls. Heat a skillet over medium-high heat, then form each ball into a thin disc using a 4-inch mold.
  3. Cook patties for 2-3 minutes per side, pressing lightly with a spatula. Season with salt, pepper, and garlic powder.
  4. Wipe the skillet clean and reduce heat to medium. Place a tortilla in the skillet, sprinkle with cheese, and add a patty. Top with red onion slices, pickle chips, and 2 tbsp sauce.
  5. Cover with remaining cheese and fold the tortilla into a half-moon shape. Cook until golden and crisp, then repeat with remaining ingredients.

Notes

Use cast iron skillet for best results.
Cook in batches to avoid overcrowding.
Press tortilla edges with tongs to seal.
Substitute ground turkey for a lighter option.
Serve with additional pickles or jalapeños for tangy heat.
