- Whisk mayonnaise, ketchup, mustard, and paprika in a small bowl. Set aside.
- Divide ground beef into 4 equal balls. Heat a skillet over medium-high heat, then form each ball into a thin disc using a 4-inch mold.
- Cook patties for 2-3 minutes per side, pressing lightly with a spatula. Season with salt, pepper, and garlic powder.
- Wipe the skillet clean and reduce heat to medium. Place a tortilla in the skillet, sprinkle with cheese, and add a patty. Top with red onion slices, pickle chips, and 2 tbsp sauce.
- Cover with remaining cheese and fold the tortilla into a half-moon shape. Cook until golden and crisp, then repeat with remaining ingredients.
