Ingredients
  

  • Ground chicken (1 lb, 93% lean)
  • Flour tortillas (6 small, 10")
  • Romaine lettuce (2 cups shredded)
  • Caesar dressing (1/2 cup, no alcohol additives)
  • Grated Parmesan (1/3 cup, or nutritional yeast for vegan option)
  • Garlic powder (1 tsp)
  • Olive oil (1 tbsp, or avocado oil substitution)
  • Salt and pepper (to taste)
  • Optional: Chopped radishes for crunch

Method
 

  1. Combine ground chicken with garlic powder, salt, and pepper in a bowl
  2. Heat skillet over medium heat; place tortilla on parchment paper
  3. Press 1/6 of the chicken mixture over half the tortilla using palm or spoon
  4. Drizzle oil into skillet, then place tortilla-chicken side down. Cook 3-4 minutes until golden, flip to warm tortilla
  5. Toss romaine with Caesar dressing and Parmesan while tacos cook; add chopped radishes if desired
  6. Stack warm tacos on plates, top with salad mixture, and garnish with remaining Parmesan or nutritional yeast

Notes

For smokier depth, add roasted garlic to romaine. Use parchment paper to prevent sticking. Store leftovers in airtight containers for 2 days. Replace nutritional yeast with Parmesan for non-vegan version.
