- Spray your slow cooker liner thoroughly with non-stick cooking spray.
- Place the chicken breasts at the bottom of the slow cooker in an even layer.
- Sprinkle the taco seasoning evenly over the top of the chicken breasts.
- Add the cubed cream cheese and the queso cheese on top of the chicken.
- Pour the diced tomatoes and green chiles over the cheese and chicken mixture.
- Cover the slow cooker and cook on low for 3 hours until chicken is tender.
- Shred the chicken directly in the pot, stir to combine with the melted cheese sauce, and serve warm garnished with green onions.
Notes
Drain the tomatoes slightly if you prefer a thicker cheese sauce. This dish stores well in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk if the sauce thickens too much.
