Ingredients
  

  • 3 boneless skinless chicken breasts
  • 1 tablespoon taco seasoning
  • 10 ounces Rotel diced tomatoes with green chiles
  • 8 ounces cream cheese, softened
  • 16 ounces high-quality queso cheese
  • Sliced green onions for garnish (optional)

Method
 

  1. Spray your slow cooker liner thoroughly with non-stick cooking spray.
  2. Place the chicken breasts at the bottom of the slow cooker in an even layer.
  3. Sprinkle the taco seasoning evenly over the top of the chicken breasts.
  4. Add the cubed cream cheese and the queso cheese on top of the chicken.
  5. Pour the diced tomatoes and green chiles over the cheese and chicken mixture.
  6. Cover the slow cooker and cook on low for 3 hours until chicken is tender.
  7. Shred the chicken directly in the pot, stir to combine with the melted cheese sauce, and serve warm garnished with green onions.

Notes

Drain the tomatoes slightly if you prefer a thicker cheese sauce. This dish stores well in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of milk if the sauce thickens too much.
