- Pound the chicken breasts using a meat mallet or heavy pan until they reach a uniform 1-inch thickness for even cooking.
- Pat the chicken surface completely dry with paper towels to ensure a superior sear.
- Season both sides of the chicken liberally with coarse salt, garlic powder, and fresh black pepper.
- Heat a large skillet over medium-high heat until hot.
- Add the olive oil to the pan and swirl to coat the surface evenly.
- Carefully place the chicken in the skillet and sear for 4-5 minutes per side, or until the internal temperature reaches 165°F and the exterior is golden brown.
- Remove from the skillet and allow to rest for 5 minutes before slicing.
Notes
