Ingredients

  • 4 boneless skinless chicken breasts (8-oz each)
  • 1/4 cup + 2 tbsp extra virgin olive oil
  • 1 medium lemon (zest and juice)
  • 4 cloves garlic, finely minced
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp dried Italian seasoning
  • 2 tsp sea salt
  • 1/2 tsp freshly cracked black pepper

Method

  1. Whisk the olive oil, lemon juice, lemon zest, garlic, parsley, Italian seasoning, salt, and pepper in a large mixing bowl.
  2. Place the chicken breasts into the bowl, ensuring each piece is thoroughly coated in the marinade.
  3. Refrigerate the chicken for at least one hour or up to 24 hours for intense flavor.
  4. Heat one tablespoon of olive oil in a large cast-iron skillet over medium heat until shimmering.
  5. Place chicken breasts in the skillet in a single layer without crowding.
  6. Sear the chicken for 4 to 8 minutes per side until the surface is browned and the internal temperature reaches 165°F.

Notes

Chicken thighs can be substituted for breasts for a juicier texture. For best results, ensure the chicken is brought to room temperature for 15 minutes before cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days.
