- Preheat oven to 400°F (200°C)
- Place salmon fillets in a baking dish skin-side down
- In a bowl, sauté garlic in olive oil until fragrant
- Add chopped shrimp and cook until no longer translucent
- Fold in cherries and set stuffed mixture aside
- Spoon shrimp filling evenly into salmon fillets
- Drizzle remaining olive oil over the top
- Bake for 20 minutes until salmon is flaky and golden

Adjust cherry quantity for tartness contrast
Substitute shrimp with scallops or add a swirl of pesto for variation
