Ingredients
  

  • 4 salmon fillets (skinless)
  • 1 tbsp olive oil
  • 1/2 lb shrimp (peeled, deveined, chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp cherries (fresh or dried, pitted)

Method
 

  1. Preheat oven to 400°F (200°C)
  2. Place salmon fillets in a baking dish skin-side down
  3. In a bowl, sauté garlic in olive oil until fragrant
  4. Add chopped shrimp and cook until no longer translucent
  5. Fold in cherries and set stuffed mixture aside
  6. Spoon shrimp filling evenly into salmon fillets
  7. Drizzle remaining olive oil over the top
  8. Bake for 20 minutes until salmon is flaky and golden

Adjust cherry quantity for tartness contrast
