Ingredients
  

  • 1 tbsp extra virgin olive oil
  • 1 small onion, thinly sliced
  • 1/4 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp dried Mexican oregano
  • 2 cloves garlic, minced
  • 1 cup canned diced tomatoes, drained
  • 2 chipotle peppers in adobo sauce
  • 1/2 cup low-sodium chicken broth
  • 3-4 cups shredded cooked chicken

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions, salt, cumin, and oregano to the skillet and sauté until onions are soft and translucent.
  3. Stir in the minced garlic and cook for about one minute until fragrant.
  4. Add the diced tomatoes, chipotle peppers, and chicken broth to the pan.
  5. Simmer the mixture for 4-5 minutes to allow the flavors to meld.
  6. Transfer the sauce base to a blender and process until smooth.
  7. Return the sauce to the skillet and stir in the shredded chicken.
  8. Simmer for another few minutes until the chicken is heated through and well-coated with the sauce.

Notes

Use rotisserie chicken to save significant preparation time. Adjust the number of chipotle peppers to 3 if you prefer a higher level of heat. Serve with warm tortillas, avocado, or cilantro.
