Ingredients
  

  • 3 cups cooked shredded chicken
  • 1.5 cups Mexican blend cheese
  • 10 ounces diced tomatoes with green chiles, well drained
  • 1 tablespoon fresh lime juice
  • 0.5 tsp dried oregano
  • 0.5 tsp chili powder
  • 0.5 tsp ground cumin
  • 0.5 tsp garlic powder
  • 20 corn tortillas
  • Vegetable oil for frying

Method
 

  1. Line a large baking sheet with paper towels and place a metal cooling rack on top.
  2. In a large bowl, combine shredded chicken, cheese, drained tomatoes, lime juice, and all dry spices.
  3. Mix until thoroughly incorporated.
  4. Warm 4-5 corn tortillas at a time in the microwave for 30 seconds until pliable.
  5. Place 2 tablespoons of filling 1 inch from the edge of each warm tortilla.
  6. Roll the tortilla tightly and secure with a toothpick.
  7. Heat half an inch of vegetable oil in a heavy pan to 350F.
  8. Fry taquitos in batches until golden brown and crispy, about 2-3 minutes per side.
  9. Drain on the prepared rack before serving.

Notes

Always drain the canned tomatoes well to prevent the oil from splattering and the tortillas from becoming soggy. If the tortillas crack while rolling, they are not warm enough. Serve with guacamole, salsa, or sour cream.
