Ingredients
  

  • 700g Chicken breast, diced
  • 2.5 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 2 tsp Sugar
  • 1 cup Chicken broth
  • 2 tbsp Lime juice
  • 2 cloves Garlic, minced
  • 1 tbsp Taco seasoning mix (cumin, paprika, garlic powder)
  • Salt to taste
  • 8 Corn or flour tortillas
  • Sour cream and cilantro for garnish

Method
 

  1. Whisk garlic, lime juice, 1.5 tbsp olive oil, taco seasoning, salt, and 2 tbsp chicken broth in a bowl to create the marinade.
  2. Coat the chicken in the marinade and let it rest for 5 minutes.
  3. Heat 1 tbsp olive oil in a skillet over medium-high heat and sear the chicken for 3 minutes per side until a crust forms, then set aside.
  4. Add the remaining chicken broth, tomato paste, and sugar to the skillet, scraping the bottom to deglaze.
  5. Chop the chicken into bite-sized pieces and return to the skillet.
  6. Simmer until the sauce thickens and coats the chicken thoroughly.
  7. Serve warm in tortillas topped with sour cream and cilantro.

Notes

You can substitute chicken breast with chicken thighs for a juicier texture. Ensure you scrape the bottom of the pan well when deglazing to capture all the caramelized bits of flavor. Store leftovers in an airtight container for up to 3 days.
