Ingredients
  

  • 1 Tbsp olive oil (or avocado oil)
  • 1 lb ground beef
  • 1 diced yellow onion
  • 2 lb cubed Velveeta cheese
  • 2 10-oz cans Rotel tomatoes with green chiles
  • 1-2 tsp chipotle chile powder to taste

Method
 

  1. Preheat skillet to medium heat (350°F/175°C) and add oil
  2. Add all ground beef and diced onion
  3. Break beef into smaller pieces using a wooden spoon; cook until browned and no pink remains
  4. Tilt skillet to drain excess grease
  5. Add cubed cheese in a single layer over medium-low heat
  6. Stir in Rotel tomatoes with green chiles and chipotle chile powder
  7. Constantly stir until fully combined and smooth
  8. Remove from heat and garnish with fresh cilantro if desired

Notes

Use 100% Velveeta for smoothest texture without clumping
Avocado oil deepens flavor
Sweet onions add milder taste
Substitute ground turkey for lighter version
Monterey Jack or white American cheese can replace Velveeta
