  • 2 large chicken breasts (buttered and sliced into 4 cutlets)
  • Salt and pepper to taste
  • 1/4 teaspoon garlic powder
  • 1/2 cup all-purpose flour
  • 4 tablespoons butter (divided)
  • 1 tablespoon extra virgin olive oil
  • 1/4 cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • 1 lemon (zested)
  • 1 tablespoon capers (drained and rinsed)
  • 1/2 cup heavy cream

Method
 

  1. Butterfly the chicken breasts and slice them lengthwise to create four thin, even cutlets.
  2. Trim excess fat and season both sides with salt, pepper, and garlic powder.
  3. Dredge each cutlet in flour, shaking off any excess.
  4. In a large pan, heat half the butter and the olive oil over medium-high heat.
  5. Sear the chicken cutlets for 3-4 minutes per side until golden brown and cooked through; remove and set aside.
  6. In the same pan, add the chicken broth, lemon juice, lemon zest, and capers, scraping up any browned bits.
  7. Stir in the heavy cream and the remaining butter until the sauce thickens slightly.
  8. Return the chicken to the pan to coat thoroughly with the sauce before serving.

Notes

Use freshly squeezed lemon juice for the best flavor balance. Heavy cream can be substituted with half-and-half for a slightly lighter sauce. Ensure the pan is hot before adding the chicken to achieve that perfect golden crust.
