- Pound the chicken breasts to an even 1/2 inch thickness.
- Heat the olive oil in a large skillet over medium heat until it shimmers.
- Add chicken breasts to the skillet and cook for 10 to 15 minutes, flipping halfway through, until internal temperature reaches 165 degrees F.
- Remove chicken from the pan and set aside.
- In the same skillet, add the sliced mushrooms and green onions, sautéing until softened.
- Stir in the alcohol-free Marsala alternative to deglaze the pan, scraping up the flavorful browned bits.
- Whisk in the heavy cream and milk, simmering until the sauce thickens to a velvety consistency.
- Season with salt and pepper to taste.
- Return the chicken to the skillet to coat in the sauce.
- Garnish with fresh parsley before serving.
Notes
Ensure you do not crowd the pan to get a good sear on the chicken. The sauce can be thickened further by simmering for an extra minute if preferred. Keep leftovers refrigerated in an airtight container for up to 3 days.
