- In a small bowl, whisk together the soy sauce, honey, and toasted sesame oil until well combined and set aside.
- Heat the canola oil in a large skillet or wok over high heat until shimmering.
- Add the chicken cubes to the hot skillet and stir-fry until browned and cooked through.
- Add the broccoli florets and bell pepper slices to the pan, stir-frying for about 3-4 minutes until tender-crisp.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Pour the prepared honey-soy glaze over the chicken and vegetables in the pan.
- Toss everything together and continue cooking for 1-2 minutes until the sauce bubbles and coats all ingredients evenly.
- Stir in the raw cashews and season with freshly ground black pepper to taste before serving.
Notes
Use tamari instead of soy sauce for a gluten-free version. Maple syrup can be used as a substitute for honey. Ensure the pan is very hot before adding ingredients to maintain the crisp texture of the vegetables.
