Ingredients
  

  • 1 1/2 lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp low-sodium taco seasoning
  • 3 cloves garlic, minced
  • 1 cup jasmine rice
  • 3 medium bell peppers, sliced
  • 2 small avocados, sliced
  • 1/4 cup fresh lime juice
  • 1/2 cup fresh cilantro, chopped
  • Salt and black pepper to taste

Method
 

  1. In a bowl, combine chicken thighs, 1 tbsp olive oil, half the lime juice, taco seasoning, minced garlic, half the cilantro, salt, and pepper.
  2. Seal and refrigerate for 1 to 2 hours to marinate.
  3. Cook jasmine rice according to package directions.
  4. Stir remaining lime juice, cilantro, and a pinch of salt into the warm cooked rice.
  5. Heat remaining olive oil in a large skillet over medium-high heat.
  6. Cook chicken for about 10 minutes per side until browned and cooked through.
  7. Sauté sliced bell peppers in a separate skillet until tender-crisp.
  8. Divide rice into bowls, top with chicken and peppers, and garnish with sliced avocado.

Notes

Substitute jasmine rice with quinoa or brown rice for extra fiber. If you are short on time, marinating for 30 minutes still provides great flavor. Store leftovers in an airtight container for up to 3 days.
