- Whisk the egg with one teaspoon of oil in a small bowl and set aside.
- Heat one teaspoon of oil in a large wok or skillet over high heat.
- Season the cubed chicken with salt and white pepper, then stir-fry in the hot wok until fully cooked.
- Remove the chicken from the wok and set aside on a clean plate.
- Add the remaining oil to the wok and add the chilled rice, breaking up any clumps with a spatula.
- Add the vegetables and cook until crisp-tender.
- Push the rice mixture to one side, pour the whisked egg into the clear space, and scramble until set before folding it into the rice.
- Return the chicken to the wok and stir in the butter, garlic, and tamari.
- Stir-fry everything together for another minute to allow the flavors to meld and serve immediately.
Notes
Use day-old refrigerated rice for the best texture; fresh rice will be too soft and gummy. If you prefer a gluten-free meal, ensure you use tamari rather than standard soy sauce. You can substitute butter with vegan butter for a dairy-free variation without losing the silky mouthfeel.
