- Rinse the rice, then combine with water in a pot; bring to a boil, then cover and simmer until tender and liquid is absorbed.
- In a small bowl, whisk together the soy sauce, brown sugar, cornstarch, minced ginger, and minced garlic to create the stir-fry sauce.
- Heat one tablespoon of sesame oil in a large wok or skillet over medium-high heat.
- Add the sliced chicken breast and cook until browned and fully cooked through; remove from the pan and set aside.
- In the same pan, heat the remaining tablespoon of sesame oil.
- Add the broccoli, onion, carrots, and green bell pepper; stir fry for 5-7 minutes until tender-crisp.
- Add the water chestnuts and the cooked chicken back into the pan.
- Pour the prepared sauce over the mixture and toss everything together for 2-3 minutes until the sauce thickens and coats the ingredients evenly.
- Serve immediately over the fluffy cooked rice.
Notes
Ensure all vegetables are chopped to uniform sizes to promote even cooking. For extra flavor, toast the sesame seeds before sprinkling them over the finished dish. Store leftovers in an airtight container in the refrigerator for up to 3 days.
