Ingredients
  

  • 2 cups cooked chicken, shredded or diced
  • 2 tsp chili powder
  • 3/4 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1 tbsp extra-virgin olive oil
  • 1 small yellow onion, diced
  • 2 bell peppers (red and orange), diced
  • 1 1/4 cups pepper jack cheese, shredded
  • 3/4 cup sharp cheddar cheese, shredded
  • 4 medium whole wheat tortillas

Method
 

  1. In a small bowl, mix chili powder, salt, and garlic powder; toss chicken with half of this blend.
  2. Heat olive oil in a skillet over medium heat and sauté onions and peppers with the remaining spice blend for 6-8 minutes until crisp-tender.
  3. Combine the sautéed vegetables with the seasoned chicken.
  4. Place a generous amount of the chicken and vegetable mixture and cheese blend onto one half of each tortilla.
  5. Fold tortillas in half and place them in the air fryer basket, working in batches if necessary.
  6. Air fry at 375°F (190°C) for 8 minutes, flipping halfway through, until the tortillas are golden and crispy and the cheese is fully melted.

Notes

Ensure you do not overstuff the tortillas to prevent filling from spilling out during the air frying process. For an extra crispy exterior, lightly spray the outside of the tortillas with cooking oil before air frying. Serve with your favorite sides like guacamole, sour cream, or salsa.
