Method
- Prepare ramekins or glasses by lining them with parchment paper.
- In a large bowl, mix pumpkin puree, chilled heavy cream, maple syrup, and cinnamon until smooth.
- In a small bowl, sprinkle gelatin over 2 tbsp cold water and let sit 5 minutes.
- Microwave gelatin in 15-second intervals until fully dissolved.
- Pour gelatin into the pumpkin mixture and whip on medium speed for 2-3 minutes.
- Evenly divide mixture among prepared glasses and refrigerate for at least 2 hours or until set.
Notes
Use 100% pumpkin puree (not pumpkin pie filling).
Dark amber maple syrup adds deeper flavor.
For a smoother texture, chill all ingredients in advance.
