Ingredients
  

  • 1 cup pumpkin puree
  • 1 cup heavy cream (chilled)
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 2 tsp gelatin (unflavored or orange-flavored)

Method
 

  1. Prepare ramekins or glasses by lining them with parchment paper.
  2. In a large bowl, mix pumpkin puree, chilled heavy cream, maple syrup, and cinnamon until smooth.
  3. In a small bowl, sprinkle gelatin over 2 tbsp cold water and let sit 5 minutes.
  4. Microwave gelatin in 15-second intervals until fully dissolved.
  5. Pour gelatin into the pumpkin mixture and whip on medium speed for 2-3 minutes.
  6. Evenly divide mixture among prepared glasses and refrigerate for at least 2 hours or until set.

Notes

Use 100% pumpkin puree (not pumpkin pie filling).
Dark amber maple syrup adds deeper flavor.
For a smoother texture, chill all ingredients in advance.
Optional toppings: maple glaze, toasted pecans, or whipped cream.
