Ingredients
  

  • 4 boneless skinless chicken breasts, trimmed
  • 1 cup teriyaki sauce (non-alcoholic)
  • 1 red bell pepper, cut into bite-sized pieces
  • 1 orange bell pepper, cut into bite-sized pieces
  • 1 cup fresh broccoli florets
  • 1 cup fresh pineapple, cubed
  • 1 red onion, cut into wedges
  • Kosher salt and black pepper to taste
  • Cooking spray

Method
 

  1. Preheat your oven to 375°F.
  2. Season both sides of the chicken breasts with kosher salt and black pepper.
  3. Brush the chicken breasts with half of the teriyaki sauce.
  4. In a large bowl, toss the bell peppers, broccoli, pineapple, and red onion with the remaining teriyaki sauce.
  5. Lay out four large sheets of aluminum foil and lightly coat the centers with cooking spray.
  6. Place an equal portion of the vegetable mixture in the center of each foil sheet.
  7. Place one chicken breast on top of the vegetable bed on each sheet.
  8. Fold the foil sides up and over the ingredients to create a sealed packet, ensuring there is enough room for steam to circulate.
  9. Place packets on a baking sheet and bake for 35 minutes.
  10. Carefully open the packets to release steam before serving.

Notes

Ensure you use a non-alcoholic teriyaki sauce. You can serve this meal as-is or over a bed of steamed white or brown rice for a heartier portion. Leftovers can be stored in the refrigerator in an airtight container for up to 3 days.
