Method
- Preheat your oven to 375°F.
- Season both sides of the chicken breasts with kosher salt and black pepper.
- Brush the chicken breasts with half of the teriyaki sauce.
- In a large bowl, toss the bell peppers, broccoli, pineapple, and red onion with the remaining teriyaki sauce.
- Lay out four large sheets of aluminum foil and lightly coat the centers with cooking spray.
- Place an equal portion of the vegetable mixture in the center of each foil sheet.
- Place one chicken breast on top of the vegetable bed on each sheet.
- Fold the foil sides up and over the ingredients to create a sealed packet, ensuring there is enough room for steam to circulate.
- Place packets on a baking sheet and bake for 35 minutes.
- Carefully open the packets to release steam before serving.
Notes
Ensure you use a non-alcoholic teriyaki sauce. You can serve this meal as-is or over a bed of steamed white or brown rice for a heartier portion. Leftovers can be stored in the refrigerator in an airtight container for up to 3 days.
