  • 1 pound ribeye steak
  • 1 Tbsp olive oil
  • 1 small red onion, thinly sliced
  • 1 green bell pepper, sliced into 1-inch pieces
  • 1 yellow bell pepper, sliced into 1-inch pieces
  • 8 slices provolone cheese

Method

  1. Cut steak into 1/8-inch slices
  2. Slice red, green and yellow bell peppers into 1-inch pieces
  3. Heat oil in skillet until shimmering
  4. Add bell peppers and onion to skillet, sauté 5-7 minutes until softened
  5. Season veggies with salt and pepper
  6. Push veggies to the edges of the skillet
  7. Add steak slices to empty space, brown all sides
  8. Add provolone cheese slices to steak
  9. Cover skillet for 2 minutes until cheese melts
  10. Serve steak and veggies directly onto pre-warmed brioche buns

Notes

Red onions enhance sweetness and reduce pungency
Use a thermometer for perfect steak doneness (130°F for medium)
Fresh bell peppers caramelize better than pre-chopped
Consider sirloin for lower fat option
Pre-warm buns at 350°F for 3-5 minutes to maintain texture
