- Cut steak into 1/8-inch slices
- Slice red, green and yellow bell peppers into 1-inch pieces
- Heat oil in skillet until shimmering
- Add bell peppers and onion to skillet, sauté 5-7 minutes until softened
- Season veggies with salt and pepper
- Push veggies to the edges of the skillet
- Add steak slices to empty space, brown all sides
- Add provolone cheese slices to steak
- Cover skillet for 2 minutes until cheese melts
- Serve steak and veggies directly onto pre-warmed brioche buns
