Ingredients
  

  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 1 pound 93% lean ground chicken
  • 1 medium sweet onion, diced
  • 1/3 cup hoisin sauce
  • 2 tablespoons reduced sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger or 2 teaspoons fresh ginger
  • 8 oz canned water chestnuts, drained and diced
  • 2-3 stalks green onions, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Butter lettuce leaves (12-16 pieces), for wrapping

Method
 

  1. Heat skillet over medium-high with oils
  2. Add chicken and cook until browned and crisp
  3. Stir in onions, garlic, and ginger until translucent
  4. Mix in hoisin sauce, soy sauce, vinegar, and chili garlic sauce
  5. Add water chestnuts and cook for 2-3 minutes
  6. Season with salt and pepper
  7. Place mixture in lettuce leaves and top with green onions

Notes

For halal compliance, ensure all sauces are alcohol-free
Substitute chicken with shrimp, tofu, or turkey
Use tamari or coconut aminos for gluten-free version
Celery or mushrooms can replace water chestnuts
Let wrap filling rest 5 minutes for less oiliness
