Ingredients
  

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¾ cup brown sugar, packed firmly
  • ½ cup butter, unsalted
  • 2 large eggs, room temperature
  • 2 ⅓ cups overripe bananas, mashed (no peels)

Method
 

  1. Preheat oven to 350°F. Grease 9x5 loaf pan with butter (or a non-stick cooking spray)
  2. Combine flour, baking soda, and salt in a large bowl using dry measuring spoon
  3. Beat butter and brown sugar with mixer until smooth (about 2 minutes)
  4. Blend beaten eggs into butter mixture. Add mashed bananas until thoroughly incorporated
  5. Pour wet ingredients into dry ingredients. Stir until just combined (do not overmix)
  6. Scrape batter into prepared pan using offset spatula. Smooth top evenly

Notes

Use high-protein flour for better rise
Pack brown sugar firmly for accurate measurement
Room temperature eggs blend more easily
