Method
 

  1. Preheat skillet over medium for 3-4 minutes
  2. Whisk olive oil and butter until melted
  3. Add carrots and stir to coat
  4. Cook 5 minutes stirring regularly
  5. Season with salt and pepper
  6. Return to heat for 3 minutes while garlic sizzles
  7. Turn off heat, sprinkle parmesan and parsley
  8. Let rest 5 minutes while cheese softens
