  • 1 cup plain Greek yogurt
  • 1 teaspoon kosher salt
  • 6 chicken drumsticks (bone-in, skin-on)
  • 1 cup all-purpose flour
  • 2 tablespoons ground paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 2 tablespoons melted unsalted butter

Method
 

  1. Combine the Greek yogurt and kosher salt in a large mixing bowl until smooth.
  2. Add the chicken drumsticks to the bowl and coat them completely in the yogurt mixture.
  3. Cover the bowl tightly and refrigerate for 2 to 4 hours to marinate.
  4. Preheat oven to 400°F (200°C) and place a cooling rack over a baking sheet.
  5. In a shallow dish, whisk together the flour, paprika, onion powder, and garlic powder.
  6. Remove each drumstick from the yogurt marinade, allowing excess to drip off, then dredge in the flour mixture until fully coated.
  7. Arrange the chicken on the prepared rack.
  8. Drizzle or brush the melted butter over the coated chicken.
  9. Bake for 35 minutes or until the skin is golden brown and the internal temperature reaches 165°F.

Notes

Using a cooling rack on top of the baking sheet is essential for hot air circulation, which creates the crispy skin. For extra flavor, use smoked paprika instead of standard ground paprika. If you need to make this gluten-free, substitute the all-purpose flour with a high-quality 1:1 gluten-free baking blend.
