- Season the sliced chicken breast thoroughly with salt and pepper.
- Heat the olive oil in a large 12-inch skillet over medium-high heat.
- Add the chicken pieces and sear for 3 minutes per side until golden brown.
- Remove the chicken from the skillet and set it aside.
- In the same skillet, sauté the onion until translucent, then add the garlic, oregano, and basil, cooking for 1 minute until fragrant.
- Stir in the rice and toast lightly for 1-2 minutes.
- Pour in the chicken stock, scraping the bottom of the pan to release any browned bits.
- Return the chicken and any accumulated juices to the skillet.
- Bring to a simmer, cover, and reduce heat to low, cooking for 15-20 minutes until the liquid is absorbed and rice is tender.
- Stir in the frozen peas and cook for 2 minutes until warmed through.
- Garnish with fresh parsley and serve warm.
Notes
Ensure you rinse the rice thoroughly to remove excess starch if you prefer a less creamy result. You can substitute frozen peas with other vegetables like diced carrots or bell peppers. Store leftovers in an airtight container for up to 3 days.
