Method
 

  1. Pound each chicken breast to a consistent 1-inch thickness using a meat mallet or heavy rolling pin.
  2. Season both sides of the chicken liberally with coarse salt, black pepper, and garlic powder.
  3. Heat a large skillet over medium-high heat until hot.
  4. Add olive oil to the pan and allow it to shimmer.
  5. Place the chicken in the skillet and cook undisturbed for 4 to 5 minutes on the first side to develop a sear.
  6. Flip the chicken and cook for another 4 to 5 minutes until it reaches an internal temperature of 165°F.
  7. Remove from heat and allow the chicken to rest for five minutes before serving.

Notes
