- Combine brown rice, salt, and appropriate amount of water in a pot, bring to a boil, cover, reduce heat to low, and simmer for 35 minutes.
- Place chicken breasts in a sauce pot with salsa, chicken broth, and chili powder; stir to coat.
- Bring the chicken mixture to a gentle boil, then simmer until chicken is cooked through and reaches an internal temperature of 165 degrees Fahrenheit.
- Toss chopped bell peppers with cooking oil and roast in the oven for 15-20 minutes until tender.
- Shred or slice the cooked chicken and portion into containers with the cooked rice and roasted peppers.
- Top each portion with a tablespoon of Greek yogurt before storing or serving.
Notes
Substitute quinoa for brown rice for an added protein boost. Store in airtight containers in the refrigerator for up to 4 days. Always ensure chicken reaches a safe internal temperature of 165°F.
