Ingredients
  

  • 1 pound ground beef (80% lean)
  • 1/2 teaspoon ground cumin
  • 4 slices cheddar cheese
  • 4 sandwich rolls (brioche or potato)
  • 1/2 cup diced tomatoes
  • 1/4 teaspoon salt
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1 small onion, diced
  • 1/2 red bell pepper, diced
  • 1 clove garlic, minced

Method
 

  1. Heat skillet over medium-high heat until fully warmed.
  2. Add ground beef to pan, breaking into small pieces with spatula.
  3. Stir in salt, black pepper, chili powder, cumin, and paprika.
  4. Add diced onion, bell pepper, and minced garlic to the beef mixture.
  5. Stir occasionally until vegetables soften (5-7 minutes total).
  6. Place cheese slices over beef mixture and cover pan to melt.
  7. Warm rolls in oven or toast in skillet.
  8. Top with beef, cheese, and tomatoes in rolls.
  9. Serve immediately with optional mayo-ketchup sauce.

Notes

Use American cheese for stronger melt, or pepper jack for spice.
Swap tomatoes with drained mango for a sweet twist.
Add black beans for extra protein/fiber.
Lettuce/avocado/green onions make great garnishes.
Store leftovers in airtight containers up to 3 days.
