- Whisk 1/4 cup olive oil, garlic, 1 tbsp red wine vinegar, 1 tbsp oregano, 1 tsp dill, salt, and pepper in a bowl
- Add chicken breast and coat evenly; marinate 15 minutes to 4 hours
- Grill chicken 6-8 minutes per side until golden and cooked through
- In another bowl, combine shallot, Dijon mustard, 2 tsp vinegar, 1 tsp oregano, lemon zest, and lemon juice with 3 Tbsp olive oil
- Chop grilled chicken into pieces and combine with salad ingredients
- Drizzle dressing over the salad just before serving
