Ingredients
  

  • 2 Chicken breasts (sliced horizontally into 4 cutlets)
  • 1 tbsp Olive oil
  • 1 tsp Dried oregano
  • 1 tsp Smoked paprika
  • 1/2 tsp Onion powder
  • Salt and pepper to taste
  • 1 Medium head of cauliflower
  • 1/4 cup Freshly grated Parmesan cheese
  • 2 cups Zucchini, diced

Method
 

  1. Slice the chicken breasts horizontally into four even filets.
  2. Toss chicken in a bowl with olive oil, oregano, paprika, onion powder, salt, and pepper.
  3. Heat a skillet over medium-high heat and sear chicken for 5 minutes per side until reaching 165°F internal temperature.
  4. Remove chicken from heat and let rest while preparing vegetables.
  5. Boil two cups of water in a pot with a steamer basket, then steam cauliflower florets until fork-tender.
  6. Mash the steamed cauliflower with Parmesan cheese until smooth and creamy.
  7. In the same skillet used for the chicken, sauté the diced zucchini until tender.
  8. Divide the chicken, cauliflower mash, and zucchini into meal prep containers for storage.

Notes

Ensure chicken reaches an internal temperature of 165°F for food safety. The cauliflower mash can be seasoned with extra salt or garlic powder to taste. These bowls store well in the refrigerator for up to 4 days.
