Ingredients

  • 1 pound ground chicken
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly grated parmesan cheese
  • 3 cups fresh spinach
  • Salt and black pepper to taste

Method

  1. In a large bowl, combine ground chicken, panko, egg, garlic powder, Italian seasoning, salt, and pepper until well incorporated.
  2. Scoop the mixture into portions and roll into smooth meatballs.
  3. Heat one tablespoon of olive oil in a skillet over medium heat and sear the meatballs until browned on all sides, then remove.
  4. In the same skillet, add the sun-dried tomatoes and sauté briefly.
  5. Pour in the chicken broth and heavy cream, bringing the mixture to a gentle simmer.
  6. Return the meatballs to the skillet, cover, and cook until the chicken is fully cooked through.
  7. Stir in the parmesan cheese and fresh spinach until the spinach is wilted and the sauce is creamy.

Notes

Serve over your favorite pasta, rice, or with crusty bread for dipping. Ensure the meatballs are of equal size for even cooking. For extra flavor, garnish with fresh basil or additional parmesan before serving.
