- In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, and sesame oil.
- Heat a large skillet over medium-high heat with a drizzle of oil.
- Add the ground chicken and cook, breaking it into small crumbles, until browned and cooked through.
- Add the minced garlic, ginger, and diced mushrooms to the skillet; sauté for 3-4 minutes until mushrooms are soft.
- Stir in the chopped water chestnuts and the prepared sauce mixture.
- Simmer for 2 minutes until the sauce thickens slightly and coats the chicken mixture evenly.
- Wash and pat dry the lettuce leaves carefully.
- Spoon the chicken mixture into the center of each lettuce leaf and serve immediately.
Notes
Ensure you use an alcohol-free hoisin sauce to maintain dietary compliance. For a thicker, glossier glaze, add 1/2 teaspoon of cornstarch to the sauce mixture before adding it to the pan. Leftovers store well in an airtight container for up to 2 days, but keep the lettuce and chicken mixture separate until ready to serve to maintain crunch.
