  • 4 tablespoons hoisin sauce (alcohol-free)
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 8 ounces canned water chestnuts, finely chopped
  • 8 ounces white button or cremini mushrooms, finely diced
  • 2 small heads Bibb or butter lettuce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Method
 

  1. In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, and sesame oil.
  2. Heat a large skillet over medium-high heat with a drizzle of oil.
  3. Add the ground chicken and cook, breaking it into small crumbles, until browned and cooked through.
  4. Add the minced garlic, ginger, and diced mushrooms to the skillet; sauté for 3-4 minutes until mushrooms are soft.
  5. Stir in the chopped water chestnuts and the prepared sauce mixture.
  6. Simmer for 2 minutes until the sauce thickens slightly and coats the chicken mixture evenly.
  7. Wash and pat dry the lettuce leaves carefully.
  8. Spoon the chicken mixture into the center of each lettuce leaf and serve immediately.

Ensure you use an alcohol-free hoisin sauce to maintain dietary compliance. For a thicker, glossier glaze, add 1/2 teaspoon of cornstarch to the sauce mixture before adding it to the pan.
