Ingredients
  

  • Rotini pasta, 8 oz
  • Ground beef, 1 lb
  • Vegetarian bacon, 6 strips (crumbled)
  • Cheese combination, 1 cup cheddar and 1/2 cup cream cheese
  • Beef broth, 1/2 cup
  • Garlic/onion powder, 1 tsp
  • Salt, 1 tsp
  • Black pepper, 1/2 tsp

Method
 

  1. Boil pasta in salted water per package instructions
  2. Brown meat in skillet until crumbly with well-developed crusts
  3. Add garlic/onion powder, salt, and pepper to meat mixture
  4. Stir in broth first to deglaze pan before adding thickeners
  5. Off-low heat, blend in cream cheese until perfectly smooth
  6. Blend in cheese until fully melted without curdling
  7. Return drained pasta to pan and stir to coat
  8. Mix in crumbled vegetarian bacon
  9. Adjust seasoning if needed

Notes

Swap half the ground beef for lentils for a vegetarian version
Replace cheddar with Pecorino Romano for a sharper flavor
Vegetarian bacon can be substituted with sautéed mushrooms + thyme
Use ground turkey or plant-based meat for alternative protein
