Ingredients
  

  • 3 cups all-purpose flour
  • 2½ cups white sugar
  • 1½ tbsp poppy seeds
  • 1½ tsp baking powder
  • 1½ tsp salt
  • 3 eggs, room temperature
  • 1½ cups milk
  • 1½ tsp vanilla extract
  • 1½ tsp lemon extract
  • ¾ cup sugar for glaze
  • ¼ cup orange juice
  • ½ tsp lemon extract for glaze

Method
 

  1. In a large bowl, whisk 3 cups flour, 2½ cups sugar, 1½ tsp baking powder, 1½ tsp salt, and poppy seeds
  2. Use a rubber spatula to scrape bowl edges
  3. Crack 3 room-temperature eggs into mixing bowl
  4. Add 1½ cups milk, 1½ tsp vanilla, and 1½ tsp lemon extract
  5. Fold dry ingredients into wet with a rubber spatula
  6. Stop mixing when streaks disappear (max 30 seconds)
  7. Pour batter into buttered 8x4-inch pans
  8. Bake 50-55 minutes until golden and a toothpick comes out clean
  9. While pans cool 10 minutes, prepare glaze: mix ¾ cup sugar + ¼ cup orange juice + ½ tsp lemon extract
  10. Pour glaze over warm loaves

Notes

Eggless option: Replace 3 eggs with applesauce or yogurt for 1½ cups
Grease pans deeply for best release; shallow parchment rounds are optional
Coconut sugar adds caramel depth; substitute half the white sugar for a richer flavor
